What you see in the preview is exactly what gets created, and you can revert a product to the original if an edit goes wrong.

No. Products are created as drafts by default so you can review pricing and copy before anything is visible to customers. You can switch to publishing immediately if you prefer. Importing never places an order or charges you for inventory, it only creates the listings.
